Finally, our team has unrivalled experience, from raw ingredients (Liam’s family have farmed the land for generations) to distillation and maturation (Stuart has more than 35 years experience managing Scotland’s most successful distilleries).
Our own spirit, first distilled this year from home-grown barley (at a friendly Irish distillery), will have to be aged in wood for at least three years before it can be called “whiskey”. Luckily, after 200 years of watching our barley ripen for harvest each year, patience is something we have in abundance at Ballindoney farm.
Tipperary Boutique Distillery Limited was founded in March 2016 by Jennifer Nickerson, Stuart Nickerson and Liam Ahearn. As a group with complimentary skills in distilling, financial planning and farming, they possess unique expertise to deliver world class Irish whiskies.
Situated in Ireland's Golden Vale, Tipperary Boutique Distillery is based on the Ahearn family farm. Our unique location, combined with our Stuart’s whiskey expertise and passion, affords us the opportunity to create great whiskey from our own barley, grown on Ballindoney farm in County Tipperary.
While we wait for our own spirit to mature, we have searched Ireland for mature whiskies which reflect the quality of the spirit which we will shortly make in Tipperary. We have specifically selected these casks to bottle and release as our inaugural expressions: the award-winning Rising, Knockmealdowns and Watershed.
